Date Scones
A no-added sugar recipe.
4 cups of your favorite flour
(I like Spelt or Barley flour, but you can use wheat, whole wheat, etc.)
1 stick of butter
1/4 teas good salt (Celtic or sea salt preferably, for flavor and good health)
1 teaspoon Cream of Tartar
2 tabs of Baking Powder (aluminum free is best)
1 cup of Dates
1 egg
½ cup of milk
1 cup boiling water
Mix dry ingredients together and then rub the butter into it.
Cut up the dates into three parts and stand in boiling water till dates are soft and water is cool into this
Mix in one egg and the milk.
Stir together well and mix into the dry ingredients.
Stir to a flexible consistency, adding more liquids if necessary, not runny, not dry but sticking to the spoon, and still able to be slowly poured.
Pour into the greased 8 “x 8" or 6" x 10" baking dish.
Bake @ 350 degrees F for 35-40 minutes,
Or until firm in the center when tapped and golden brown.
Cool.
Enjoy!
Best eaten warm or fresh with butter on each slice. You can overdo this one, believe me, its good.
Sticky Rice Pudding
A no-added sugar recipe
2 cups sweet, 'sticky' or glutinous rice (all these names apply to the same thing)
4 cups water
1/4 teas Celtic Gray salt
1/2 cup dried fruit of choice
1/4 cup honey
1 can coconut milk or coconut cream (optional)
In a casserole dish put 2 cups of sweet,'sticky', or glutinous rice (all mean the same thing) black or white or black and white together. If you use black and white, then mix them into half cup of black and one and a half of white.
Add water to double the quantity of rice, plus a half cup extra, add a good pinch of Celtic Gray salt, add raisins, cranberries, dried cherries or apricots to taste about a half cup.
Stir in a quarter cup of honey and stir well.
Place in the oven on 350 degrees F and bake until the rice is soft, sticky and shiny and all of the water is taken up. It may have a carbohydrate skim on the sides of the bowl.
For those of you who are not afraid of cholesterol, add half a can of coconut milk to the mixture before baking. Serve hot, with coconut milk on the top.
Alternatively serve with plain yogurt and sliced banana on the top .. with or without the coconut milk.
You will never cease to like this one.
